Even though I’ve been spending more time working from home, lately, my work schedule hasn’t slowed down. In fact, it has gotten busier. I have been super-busy trying to balance my full-time job with teaching virtual yoga classes and being the best mommy that I can to my 2-year-old son.
So, there are times when I need a nutritious boost that is easy-to-make and filling. That’s where this Atkins Berry Delicious smoothie recipe comes into play.
A couple of days ago, I was knee-deep in playing catch-up at work and realized I had worked through lunch and had a small window of time between wrapping up for the day, teaching a yoga class and grabbing TJ from daycare, so I put this smoothie recipe to the test.
I’m not gonna lie, when I saw that it contained frozen riced cauliflower and I instantly scratched my head, like WHAT? But, I still gave it a try and was pleasantly surprised by the refreshing final result. It tasted sooo good, yall! The cucumber and riced caluflower bring a refreshing taste to balance the sweetness of the strawberries and raspberriy flavors.

Check out the ingredients list:
– 1 bottle of Atkins Strawberry Shake
– 1 tablespoon chia seeds
– 1/2 cup fresh raspberries
– 1/4 cup raw, sliced cucumber
– 1/4 cup frozen riced cauliflower
Here’s how to make the smothie:
1. Add the Atkins Strawberry shake and chia seeds to the blender and let sit for 5 minutes.
2. Add the fresh raspberries, cucumber and riced cauliflower and blend until it’s at your desire consistency. My blender has a smoothie setting that blends it for about 60 seconds and it came out perfectly!
Of course you can personalize this by adding more fruits and flavors to the mix, but I thoroughly enjoyed this recipe as-is! Cheers and I hope you enjoy!
